Parmigiano Reggiano is a characteristic product of the provinces of Parma, Reggio Emilia, Modena, Bologna, and Mantua, whose quality and authenticity are recognized and guaranteed worldwide by the PDO label.
Each wheel of Parmigiano Reggiano cheese is the result of 550 liters of milk combined with the expertise of master cheesemakers and a thousand-year-old tradition, handed down through the use of natural products and ancient tools.
All stages of production are supervised by expert artisans: slow coagulation using rennet and whey, fragmentation of the curd with a "spino", cooking in a copper boiler, wrapping in linen cloth, insertion into a mould to give it its characteristic shape, numbering, salting by osmosis and ageing.
After 12 months of aging, the wheels are evaluated by experts and, if deemed suitable, are branded with the appropriate stamp, thus becoming Parmigiano Reggiano
